Hand sorted before crushed and de-stemmed. 2020’s Cabernet Sauvignon Reserve was designated as such to reflect the optimal grape maturation, ageability, and overall organoleptic quality witnessed in this vintage. The Cabernet Sauvignon Reserve is composed of fruit harvested entirely from vineyard Trystan. Fermented in heat with punch-downs twice daily. Aged 27 months in neutral oak. Bottle age 5-7 years.
